There are a few things that the Yo Sox team is seriously obsessed with: brunch, socks, and avocados. So for today’s post, we wanted to combine all three and share with you an incredible recipe for California-style avocado toast! This recipe is quick and simple and perfect when you have a few minutes to make breakfast before work or when you’re hosting your friends for Sunday brunch. This ultimate breakfast toast is piled high with loads of smashed avocado, fresh veggies, and a beautiful fried egg.
This recipe is for one person, but if you want to make this for more people just double up the ingredients accordingly.
-1/2 Medium ripe avocado, pitted and diced
-Juice from 1/2 lime
-Salt and pepper to taste
-1 Slice bread, toasted
-1/2 Medium tomato, thinly sliced
-1/2 Sweet pepper, thinly sliced
-1 Tablespoons vegetable oil
-1 Large egg
-1 Tablespoons minced fresh parsley
Place avocado in a medium bowl, mash thoroughly with lime juice, and salt and pepper to taste. Scoop the avocado onto toast slice. Top toast with tomato and pepper slices. Set aside for a moment.
Heat oil in a medium saucepan over medium-high heat until shimmery. Crack the egg into the pan and sprinkle egg with salt and pepper. Allow egg to cook, without flipping until whites of egg are set. Carefully remove from pan with a spatula and transfer to a plate.
Carefully arrange fried egg on top of toast. Sprinkle minced parsley over top and enjoy toast immediately!
